Hub Spicy Margarita (Connaught Hotel)

Tequila, Ginger, Tamarind Chutney, Lime juice, with a Chilli, Garam Masala and salt rim



Ingredients

60mls Tequila, 

1 Julian of Ginger, 

30mls Tamarind Chutney, 

30mls Lime juice, 

Chilli flake, Garam Masala and salt rim

Glass

Margarita

Mixology

Rimm glass with lime. Put a small amount of garam masala powder, salt and a small pinch of chilli flakes on a plate. Rim glass on the plate.

Muddle ginger, add Ice, 30mls Tamarind Chutney, 30mls Lime juice, and 60mls tequila. Shake and double strain into a Rimmed Margarita Glass.

Blended Scotch, Islay Malt, Gingembre Syrup, Honey Water, Lime Juice, Red Apple

60mls Blended Scotch
15mls Islay Malt
5mls Gingembre Syrup
10mls Honey (Watered down)
30mls Lime Juice
half Red Apple

Old fashioned

Mixology

Muddle half a Red apple in a Cobbler shaker, add gingerbread syrup and blended scotch. Lime juice and runny honey, Fill the tin with Ice and give it a hard shake. 
Double strain on the rocks in a chilled old fashion. Using the back of a bar spoon, layer 15ml Islay malt on top.

6 leaves Mint
10mls Sugar Syrup
20mls Lime Juice

Small Wine Glass

Mixology

Boil a teapot of water, add 1 handful of mint and steep for 5 minutes
remove mint, and chill in the fridge
slap mint, add mint tea, lime juice, sugar syrup and Ice into a shaker
shake and Double strain into a wine glass

45mls Camomile tea,

15mls Homemade Fennel Syrup

How to Make Fennel Syrup

Roast in a saucepan a quarter of an old-fashioned glass of fennel seeds. Once roasted, add half an Old Fashioned of Sugar and 1 Old Fashioned of Water.

Cook at low temperature until it reduces by about 50%, allow to cool, strain and bottle, then refrigerate

Shake and double strain into a Chilled Margarita Glass.

Muddle half a pear, add 10mls of Elderflower syrup, Ice and 60mls of grey Goose vodka. Shake and double strain into a chilled Martini Glass.

Rim glass with strawberry preserve and ground Black Pepper.
Shake with ice 60mls Stranger and Sons Gin, 10mls Elderflower Syrup, 20mls Raspberry Puree, and 2.5mls Balsamic Vinegar, 
Double strain over Ice into the glass

Garnish

Orange twist and raspberries on a cocktail stick


Nilgiri Sunset (Ooty)

Old Monk Rum, Pineapple, Hibiscus Tea, Sugar Syrup, Angostura Bitters

60mls Old Monk Rum, 

4 chunks Pineapple, 

45mls Hibiscus Tea, 

5mls Sugar Syrup, 

2 dashes of Angostura Bitters

Muddle 4 chunks of Pineapple, add 45mls of hibiscus tea, 5mls of sugar syrup, 2 dashes of Angostura bitters and 60mls of Old Monk Rum.

Shake and Double strain into an ice-filled Old Fashioned Glass

Chikmagalur Martini (Gateway Chikmagalur)

Grey Goose Vodka, Espresso, Coffee Liqueur, Sea Salt,  Parmesan Cheese



Ingredients

45mls Grey Goose Vodka, 

40mls Espresso, 

15mls Coffee Liqueur, 

1 pinch of Sea Salt,  

Grated Parmesan Cheese

Mixology

Shake with Ice, 45mls Grey Goose Vodka, 40mls Espresso, 15mls Coffee Liqueur, and 1 pinch of Sea Salt. 

Remove Ice and dry shake, and strain into a chilled Martini glass.

Garnish

Grated Parmesan Cheese on top and 3 coffee beans.

3 Blackberries (or 15mls of Blackberry puree)

5mls Lavender syrup

Sparkling Wine Top

Muddle 3 Blackberries and pour into a chilled Champagne flute; add 5mls of Lavender syrup and top with Sparkling wine,

30mls Sauvignon Blanc, 

8 chunks of Watermelon, 

8 Mint leaves, 

30mls Lychee Juice

Muddle 8 chunks of Watermelon, add 8 slapped Mint leaves, 30mls of lychee juice, Ice, 30mls of Sauvignon Blanc and 45mls of Grey Goose vodka.

Shake and double strain into an ice-filled Collins Glass

Mixology:

In a Boston shaker, add all ingredients except the dark rum
Fill the shaker with Ice and give it a hard shake, and double strain it in a collins glass
Using the back of a bar spoon, top up 30ml of dark rum to give an opaque layer on top of the cocktail

Garnish

Mixed Berry infused Bombay Sapphire Gin, Basil, Lime, Tonic Water



Ingredients

60mls Mixed Berry infused Bombay Sapphire Gin, 

4 Basil leaves, 

15mls Lime Juice, 

Topped with Tonic Water

Mixology

rip and slap 4 basil leaves directly into the glass; add 15mls of lime juice, and 60mls Mixed Berry infused Bombay Sapphire Gin, stir together, and fill the glass with Ice. Top with Tonic and gently stir.

Garnish. 

Add berries into the drink and a Basil sprig on top.



Hampton Plum Whiskey sour (gateway Coonoor)

Bourbon, Lemon, egg whites, plum, Strawberry Jam, Angostura bitters



Ingredients

60mls Bourbon,

 1 Lemon, 

 1egg whites, 

1 plum, 

1 bar spoon of Strawberry Jam, 

2 dashes of Angostura bitters

Mixology

Muddle 1 whole Plum, add 1 egg white, freshly squeezed juice of 1 lemon, 1 bar spoon of strawberry jam, 2 dashes of Angostura bitters, Ice and 60mls of Bourbon.

Shake and remove Ice. Dry shake and strain into a Martini glass

Garnish

a thin slice of Lemon and Plum floated on top of the foam.


Alfana Spritz (Cidade De Goa)

Aperol, Sparkling wine, Soda, Clementine



Ingredients

60mls Aperol, 

60mls Sparkling wine,

60mls  Soda, 

1 Clementine

Wine glass

Mixology

freshly squeeze the juice from 1 whole Clementine, strain directly into the glass, top with 60mls Aperol, 60mls Sparkling wine, and 60mls  Soda, and fill the glass with Ice. Gently stir.

Garnish

half a Clementine on top

Gin, Triple Sec, Pomegranate, Chaat Masala



Ingredients

45mls Gin, 

15mls Triple Sec, 

1 Pomegranate, 

half a bar spoon of Chaat Masala

big Liqueur glass

Mixology

Freshly squeeze juice from 1 Pomegranate, add Ice, half a bar spoon of Chaat Masala, 15mls of triple Sec and 45mls of Gin.

Shake and double strain into Big Liqueur glass, and top with Ice.

Garnish

Slice of Pomegranate



Frozen Papaya Tiger Mojito (sawai Madhopur Lodge)

Bacardi rum, Papaya, Mint, Lime, Mint Syrup, Mint Tea



Ingredients

45mls Bacardi rum, 

2 chunks Papaya, 

8 Mint leaves, 

20mls Lime, 

10mls Mint Syrup,

45mls Mint Tea

Glass

Highball

Mixology

Blend with ice 45mls Bacardi rum, 2 chunks Papaya, 8 Mint leaves, 20mls Lime, 10mls Mint Syrup, and 45mls Mint Tea and pour into Highball Glass.

Garnish

Thin slices of Papaya and a Mint sprig


Infinite Kangra (Norbu the Montanna Dharamsala)

Glenmorangie single malt Whiskey, Aam Panna, Black salt, Lime juice, Guava Juice, Ginger Ale



Ingredients

60mls Glenmorangie single malt Whiskey, 

15mls Aam Panna, 

tip of a bar spoon of Black salt, 

15mls Lime juice, 

30mls Guava Juice, 

top with Ginger Ale

Mixology

Shake with Ice, 60mls Glenmorangie single malt Whiskey, 15mls Aam Panna, the tip of a bar spoon of Black salt, 15mls Lime juice, and 30mls Guava Juice; double strain into a Highball glass filled with Ice.

Top with a bit of Ginger ale.

Mulkila Grilled Peach Julep (baragarh resort and Spa Manali)

Grilled Peach infused Bourbon, Mint, Brown Sugar, and soda.



Ingredients

60mls Char Grilled Peach infused Bourbon, 

8 Mint leaves, 

1 packet of Brown Sugar,  

Top with soda Water.

Glass

Mixology

In a Highball Glass, rip and slap 8 Mint leaves, add 1 packet of Brown sugar and mix together with a bar spoon for 30 seconds,

Add 60mls of Char Grilled Peach infused Bourbon and stir until sugar is fully dissolved. Fill the glass with Ice; top with soda and gently stir.

Garnish

Ajmer Oasis Paloma (Pratap Mahal, Ajmer)

Tequila, Grapefruit, Chamomile Honey water, Strawberry, Soda



Ingredients

60mls Tequila, 

Half a Grapefruit, 

15mls Chamomile Honey water (180mls strong Chamomile Tea with 120mls of Honey)

4 Strawberries,

Top with Soda

Old fashioned

Mixology

Muddle 4 strawberries, add Half a freshly squeezed grapefruit, 15mls of Chamomile honey water and 60mls of tequila and shake with Ice.

Double strain into an ice-filled Old fashioned glass and top with Soda water.

Garnish

Slice of grapefruit and Strawberry,

Virgin Kiwi and Cucumber Collins (Gir Gujarat)

Cucumber, Kiwi fruit, Lime Juice, Sugar, Soda




Ingredients

20% of Cucumber with Skin Removed

Half Kiwi fruit with skin removed

30mls Lime Juice

15mls Sugar Syrup

Top with Soda

Muddle directly in a highball glass 20% of Cucumber with Skin Removed and Half Kiwi fruit with skin removed; add Ice, 30mls Lime Juice, 15mls Sugar Syrup and Top with Soda.

Gently stir.

Garnish

Slice of Cucumber and Kiwi fruit

1 Julian Ginger, 

15mls Tamarind chutney, 

a quarter of Lemongrass stick, 

5 Kaffir Lime Leaves, 

15mls Lime Juice

150mls Coconut water

Muddle 1 Julian Ginger and a quarter of a Lemongrass stick; add 5 ripped Kaffir Lime Leaves, Ice, 15mls of Tamarind Chutney,15mls Lime Juice, and 150mls Coconut water.

Shake and Double strain into a chilled Martini Glass.

Garnish

Kaffir lime leaf and Lemongrass stick
