Tequila, Ginger, Tamarind Chutney, Lime juice, with a Chilli, Garam Masala and salt rim

1 Julian of Ginger,
30mls Tamarind Chutney,
30mls Lime juice,
Chilli flake, Garam Masala and salt rim

Mixology
Rimm glass with lime. Put a small amount of garam masala powder, salt and a small pinch of chilli flakes on a plate. Rim glass on the plate.
Muddle ginger, add Ice, 30mls Tamarind Chutney, 30mls Lime juice, and 60mls tequila. Shake and double strain into a Rimmed Margarita Glass.

Muddle half a Red apple in a Cobbler shaker, add gingerbread syrup and blended scotch. Lime juice and runny honey, Fill the tin with Ice and give it a hard shake.
Double strain on the rocks in a chilled old fashion. Using the back of a bar spoon, layer 15ml Islay malt on top.

How to Make Fennel Syrup
Roast in a saucepan a quarter of an old-fashioned glass of fennel seeds. Once roasted, add half an Old Fashioned of Sugar and 1 Old Fashioned of Water.
Cook at low temperature until it reduces by about 50%, allow to cool, strain and bottle, then refrigerate

Shake with Ice, 45mls Grey Goose Vodka, 40mls Espresso, 15mls Coffee Liqueur, and 1 pinch of Sea Salt.
Remove Ice and dry shake, and strain into a chilled Martini glass.

Mixology:
In a Boston shaker, add all ingredients except the dark rumFill the shaker with Ice and give it a hard shake, and double strain it in a collins glass
Using the back of a bar spoon, top up 30ml of dark rum to give an opaque layer on top of the cocktail

rip and slap 4 basil leaves directly into the glass; add 15mls of lime juice, and 60mls Mixed Berry infused Bombay Sapphire Gin, stir together, and fill the glass with Ice. Top with Tonic and gently stir.
Garnish.
Add berries into the drink and a Basil sprig on top.

1 bar spoon of Strawberry Jam,
2 dashes of Angostura bitters

Muddle 1 whole Plum, add 1 egg white, freshly squeezed juice of 1 lemon, 1 bar spoon of strawberry jam, 2 dashes of Angostura bitters, Ice and 60mls of Bourbon.
Shake and remove Ice. Dry shake and strain into a Martini glass
Garnish
a thin slice of Lemon and Plum floated on top of the foam.

Aperol, Sparkling wine, Soda, Clementine

freshly squeeze the juice from 1 whole Clementine, strain directly into the glass, top with 60mls Aperol, 60mls Sparkling wine, and 60mls Soda, and fill the glass with Ice. Gently stir.

8 Mint leaves,
1 packet of Brown Sugar,
Top with soda Water.

In a Highball Glass, rip and slap 8 Mint leaves, add 1 packet of Brown sugar and mix together with a bar spoon for 30 seconds,
Add 60mls of Char Grilled Peach infused Bourbon and stir until sugar is fully dissolved. Fill the glass with Ice; top with soda and gently stir.

15mls Chamomile Honey water (180mls strong Chamomile Tea with 120mls of Honey)
4 Strawberries,
Top with Soda

Muddle 4 strawberries, add Half a freshly squeezed grapefruit, 15mls of Chamomile honey water and 60mls of tequila and shake with Ice.
Double strain into an ice-filled Old fashioned glass and top with Soda water.
